Daina's Cake

Today is Valentine's day. Sweets abound everywhere, so I thought I would share our family's favorite dessert. This is named "Daina's Cake" because I received the recipe from a friend at BSF (Bible Study Fellowship) many years ago. Grant and Haley would be just as happy with just the frosting, but alas, I put it on top of a cake. As a matter of fact, with Haley home today, there was actually just a little bit of a tussle over who licked the beater.

Daina's Cake

1/2 cup butter- NOT margarine
1 cup brown sugar, packed
1/4 cup milk- I use whole milk
1-1 1/2 cup sifted (yes, sifted!) powdered sugar
1/2 teaspoon vanilla
1/2 cup chopped pecans

Over the years, I have learned not to rush this recipe. Do not turn the heat up. Let it come to a boil before starting the timer.

Combine butter and brown sugar in saucepan; melt over low heat. Bring to a boil over low heat and boil for 2 minutes, stirring constantly. Remove from heat and add milk. Return to heat and bring back to a boil. Remove and let cool to luke warm. Add powdered sugar until desired consistency. Add vanilla and pecans. Frost yellow cake. Fight over who gets to lick out the bowl.
