Sugar Cookies

My son LOVES sugar cookies. Not the cut out kind. Just plain old frosted sugar cookies. For his birthday, this is his choice over birthday cake. Here is the recipe, that I actually obtained from my sister. Beware, it makes many many dozens of cookies, so be ready to bake. To cut down on the dozens, I just use a bigger scoop. Enjoy!

Sugar Cookies

1 c powdered sugar
1 c sugar
1 c margarine (NOT butter)
1 c oil

2 eggs

1 tsp vanilla extract
1/2 tsp almond extract (I use 1 1/2 tsp of vanilla and omit almond extract)

4 1/2 c flour
1 tsp salt
1 tsp soda
1 tsp cream of tartar

Cream together sugars, margerine and oil. Add eggs one at a time. Add vanilla. Mix together dry ingredients and add to creamed mixture one cup at a time until thoroughly incorporated. Chill for several hours. Dough will remain soft.

Use cookie scoop. Scoop cookies and roll in sugar. Place on cookie sheet and flatten with bottom of glass dipped in sugar. Bake @ 375 10 minutes. Don't let them get browned. Watch the first batch in your oven so you know how long to bake. Scoop size can make a difference, too. Cool and frost with buttercream frosting.

Frosting:

5 tbs butter
3 tbs milk
1 tsp vanilla
powdered sugar
