Pancakes

My husband and son love pancakes. Not just any pancakes. Especially not the big fluffy ones. So, I had to find a recipe for pancakes from scratch that were easily made from stuff that you always have on hand. Be aware, you really need to at least double this recipe. Also, they freeze and reheat well.

Pancakes from scratch

1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoon sugar
1 egg, slightly beaten
1 cup milk
3 tablespoons butter, melted

Stir flour, sugar, salt, and baking powder together in mixing bowl. Add slightly beaten egg, milk, and melted butter; mix by hand until well mixed, but still a bit lumpy. Lightly oil a griddle or skillet and heat over medium hot fire. Pour or spoon out on griddle to for saucer size pancakes. Cook until bubbles form on top surface; turn the pancakes and cook until lightly browned.
