Vegan Bean and Rice Soup

Well, here I was again, needing something to bring in a crockpot to church. And, remembering that our pastor was vegan, and wanting to use only what I had on hand. I created this soup. When they asked me what it was, this was the best title I could come up with. There was not a drop left in the crockpot. Even Grant liked it and had two bowls, scraping the last one from the dregs of the pot.

Vegan Bean and Rice Soup

1 can pinto beans
1 can black beans
1 can navy beans
1 can pink beans
2 15 ounce cans tomato sauce
6 cups vegetable broth
2 stalks celery, diced
1/4 cup dried onion (you could probably use fresh, I was lazy)
3-4 tablespoons chili powder
1 boil in bag brown rice

Rinse beans and put in crockpot with the remaining ingredients. If not making vegan, you can probably use any type broth, and I would use "ranch" beans, undrained. Stir it up and cook on high for 2-3 hours.

The good thing about this recipe is that it is not written in stone. You could use any favorite beans, any broth, season as desired. Yummy.
