Baked Pineapple

So, it's time for one of our favorites for Easter feasting. Don't let the name of this recipe fool you. There is really nothing healthy about this recipe at all. I obtained this recipe at one of those pot luck dinners at "the boss's" house. Brian loved it and insisted that I get the recipe. It is now a family favorite and a must serve anytime that we have ham. Make sure that you bake it in a shallow baking dish. Too deep, and it is soggy.

Baked Pineapple

16 ounce can crushed pineapple, in heavy syrup
3 tablespoons flour
2 eggs, beaten
1 cup sugar

6 slices worthless white bread, cubed, crusts on
1 stick butter, yes, butter

Butter 9x13 pan (or comparable dish. Mix together first four ingredients. Pour into prepared pan. Saute bread cubes in melted butter until lightly browned/toasted. Spread evenly over pineapple mixture. Bake at 350 for 40 minutes.
