Quinoa and Black Bean Soup


It's time to start off with some healthy eating for the new year. Here is a modified recipe from our pastor, who is a "sweegan"- vegan that eats sweets. If you want to add some meat, I am sure that some shredded chicken would be great in this. We like it vegan, though.

Quinoa and Black Bean Soup

4 cups vegetable broth (or more to taste)
1 cup quinoa (make sure to soak for at least 4 hours before making soup)
1 cup corn (to me, this is optional)
1 can black beans, rinsed and drained
1/3 cup salsa
1 ripe but firm avocado, diced
salt
1/4 cup chopped fresh cilantro (tastes great without)
lime wedges for serving

In large saucepan, bring broth to boil. Stir in quinoa, and reduce heat to medium high, continue to simmer for 15 minutes, uncovered. Stir in corn , black beans, and salsa, then return to a simmer. Remove from pan and stir in the avocado. Yumm.
