Popovers

So, tonight I asked Grant what he wanted for dinner. He asked for "those muffins with a lot of air in them". Try to figure that out. Popovers. Easy to make, a few ingredients, so why not? This is from my very favorite cookbook, the Betty Crocker Picture Cookbook, 2nd edition, from the 1950's. I'm on my second one...

Popovers

1 cup SIFTED flour- yes, you must sift it!
1/2 teaspoon salt
2 eggs
1 cup milk (I use whole milk)

Mix it all together in a bowl, JUST until mixed. It will be lumpy. Don't overmix. Pour into very well greased (crisco) deep muffin tins. Bake at 425 for 40 minutes. Serve hot with lots of butter.
